We the people love this Great American Potato Salad! It's a creamy, crunchy, hearty recipe with mayo, celery and hard-cooked eggs.

I semi mash my potatoes, use celery instead of celery seed, creole mustard, and add horseradish. If I use pickle relish, I use dill. I also added radishes.
As presented this is a rather ordinary salad. I Have made a version of this type of potato salad for decades. I like to add Dijon mustard, & use sweet relish along with sweet pickle juice. I also add green/red/yellow sweet peppers. Leave the peel on, get the vitamins & great taste. If using same day, add chopped cherry tomatoes.
If you wish to cut back on eggs, but love them in this salad, try substituting cooked egg beaters and it works great. I too left out the celery seeds, but that's personal preference, but I added diced bell pepper instead.
I didn't have any onion when I made this but it was great anyway. Next time I'll try using a couple more eggs. Absolutely delicious. The relish was a nice touch.
If you are using grey poupon, leave out the salt or cut it down some. I made a version of this with more egg and no celery. It was the best I've ever had. I've only made potato salad 3 times and it was always gross. This time it was GREAT!
I thought it was good, but could use a little more spice. I also thought it was kind of mushy,but maybe I cooked the potatoes too long.
So delicious and easy. With such a perfect blend of these simple ingredients, it is easy to play with to accomodate different tastes. But we loved it as is!! Great basic for any new cook, as well!
A winner if made with with Miracle Whip (sorry, I do not like mayo, even by Kraft). Never liked potato salad until I made this one. I used half the amount pickle relish, and used the sweet variety instead. Also subbed celery salt for the celery seed plus salt and mashed the boiled eggs and mixed them in with the dressing.
