MY FAMILY LOVED IT!! I CUT MY STRAWBERRIES IN HALF AND ARRANGED THEM OVER THE ENTIRE TOP OF THE CAKE. IF I MAKE IT FOR THE 4TH OF JULY I'LL ALSO ADD BLUEBERRIES FOR A MORE PATRIOTIC LOOK!

Since summer is right upon us, I added a teaspoon of coconut extract for a flavor of the tropics. What a lite taste of heaven without all the guilt. Also, I would use a can of mandarin oranges in place of the pinelapple and add a teaspoon of orange extract plus a few drops of orange food coloring for a cool summertime favorite of the dreamsicle memories.
