Comment to alicehelen....hint: don't make the pudding according to the pudding package. Put the pudding mix in a bowl without the milk...stir in the pineapple and coolwhip. this is what makes it fluffy.

after i made the pudding, i immediately added the whip cream and pineapple. it was soupy and never became fluffy. i would recommend that you make the pudding and refridgerate it for an hour prior to adding the other two ingredients to improve the thickness of the product.

The cake was a a hit at home as well as at work. It was very easy to make & the only ingredient I substituted was fresh raspberries for strawberries. It was just as light & refreshing. I can't wait to make it again for my family's Christmas dinner.

I also made a trifle, since I was carrying it to a party, for ease of transport and serving. I had LOTS of compliments, and lots of requests for the recipe! Thanks!

This was a fantastic dessert. THe only thing I done different was instead of layering the cake, I crumbled it up and made a trifle instead. Very easy and makes a beautiful dish. Sunday Caradine Birmingham, ALabama
