Everyone really enjoyed this recipe at my last get-together. Though I substituted Cucumbers for Zucchini. I don't recommend using the fresh greens in it because it doesn't make for great leftovers the next day. Without the greens would be much better. Very Good overall and I would definitely make this again.

It makes a great snack in the evening when we want to eat something but don't want to eat a lot of fat before bedtime.

Excellent Salad for a take along anywhere. Made with cucumbers and red onions is a great way to also use those summer vegies!

I also put in chopped tomatoes and green bell pepper but no carrots. It taste even better a couple of days later if there is any left over.

the ingredients are superb and it seems as though many variations are possible. i even like the idea of thinly sliced yellow squash (for color) over zuchinni. i also see many other possibilities as suggested by other raters - red onions, chicken, etc. quite tempting for everyone.

I liked the flavor of the fresh vegetables had with the salad greens. I also added some baked chicken chopped up without the sskin for a variation. Thanks
