Roasted Potato Salad

I just finished making this potato salad and it is fabulous. Even the 3/4 cup of miracle whip is too much for my preference; I would suggest adding it little by little until you get the desired consistency. I can't wait to hear what my family thinks when I serve it at a party tomorrow.

I found this recipe 12 years ago and have been making it ever since. My entire family always asks for it and my husband LOVES it!!! Even the kids will eat it - that says a lot. Helpful hint: cut the potatoes and coat with a little olive oil, add some salt and pepper and a little garlic salt. Mix it up then cook it. Adds some flavor while cooking. Never was able to make potato salad without getting mashed potatoes-this was great-my adult kids loved it. Used white potatoes-had to bake a little longer.

I used ranch dressing instead of salad dressing and I left out the eggs. When I roased the potatos I added onion and basil to the potatos. This is one of the best, easiest recipes ever and I have shared it with many friends.

This is THE BEST potato salad. I have served it to company many times and also taken it to potlucks and everyone raves about it and wants the recipe! I use Miracle Whip Light and I also don't use a whole cup - it ends up being too much. I highly recommend this recipe if you love potatoes and are tired of your old, boring potato salad (like I was)!
