I made this for saint patty day. The middle did not do what i wanted it to do but it came out better than i thought it would. Very rich and creamy. It was all eaten.

What You Need

pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

1/2

cup granulated sugar

1/2

tsp. vanilla

eggs

tsp. green creme de menthe

OREO Pie Crust (6 oz.)

tsp. green cake decorating crystals or colored sugar

Make It

PREHEAT oven to 350°F. Beat cream cheese, granulated sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix well. Stir in creme de menthe.

POUR into crust.

BAKE 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Sprinkle with decorating crystals just before serving. Store leftover cheesecake in refrigerator.

How to Make Shamrock Decoration

Use a 2-inch heart-shaped cookie cutter and place it just above the center of the chilled cheesecake. Sprinkle green cake decorating crystals in the cookie cutter. To maintain heart shape, use a light touch when sprinkling crystals. Remove the cookie cutter and place it directly to the right side of the heart you just made, with the bottom points touching. Repeat sprinkling the crystals. Next, make a third and last green heart on the left side of the center heart, again, bottom points touching.

Almond Cherry Cheesecake

Prepare as directed, substituting 2 Tbsp. almond-flavored liqueur for the creme de menthe and using a HONEY MAID Graham Pie Crust. Top with 1 can (21 oz.) cherry pie filling just before serving.

I made this for my mint-loving family and they LOVED it. I made my own crust with crushed mint Oreos and melted butter and also substituted 1/2 tsp. of mint extract + 2 drops of green food color for the creme de menthe. It was a very minty hit! Even my mom who claims to not be a cheesecake lover thoroughly enjoyed it.

I was so excited to make this dessert! I did and was really very disappointed with it. I would probably never make it again. Wasn't nearly as minty as I thought. Creme De Menthe is a wonderful liqueur, but this dessert I wouldn't recommend. You except one thing and don't even get that.

My family rated this recipe as a loser. It came out a kind of sickly color and nothing like the picture. As well, it lacked a distinctive mint taste. The texture and consistency were fine. With four teens, when no one will touch the leftovers in the refrigerator you know it is not a 'have again'.
