I have made this for years but used salsa instead of tomatoes
I have been making this for years - absolutely my favorite dip!!
I have used this recipe for years. It is printed inside the lid of the cheese box. I very often add another can of Rotel, and a can of refried beans. YUM
Love it! I like mine a bit spicer. I use the 2 pound Velveeta and add three cans of Rotel because I like more substance with each bite. I use at least one can of the Mexican Rotel and drain the other two cans and hold back the juice until I see I need it. I could have used one more can for my liking. The cheese this last time was thicker when melted. Still love it however you fix it.
I change this slightly when I make it. I use 32 oz. velveeta (any kind--we like the queso blanco), 2 cans of rotel (any variety) with the juice, and one can of cream of mushroom soup. The soup makes the whole dish come together and gives it that creamy texture. This is also delicious with taco seasoned ground beef stirred in. I look forward to trying it with spicy sausage next time I make it!
I used Rotel diced tomatoes with habaneros because we love it hot.Was very flavorful and enjoyable.Gives even the dullest chip pizzaz.

My family has made this for years. I use 2lbs of chees and 3 cans of Rotel, then it is spicier and doesn't have to stay warm. Great for tailgates & float trips.
My family makes this all the time for years and years, except we add italian sausage or beef seasoned with boullion cubes to it. Rotel adds that perfect spice! Love it!
I always double this recipe and add a can of cream of chicken soup. Know one has ever noticed it had soup in it and I'm always asked to bring my cheese dip to different occasions. Adding the soup makes it a little thicker and it goes a further.
