Excellent recipe. I split it because 16 servings is a bit much. Made shamrock out of a manilla folder - really made the presentation extra special. Pecan crust complimented Bailey's in mix. One note: took about 40 minutes to get ingredients together. Also, I used low-fat products and it didn't change the richness of the cake at all. Easy and very delicious.
This is a great cheesecake... not too sweet, but very creamy and rich. Be careful not to overbake cheesecake as this will cause it to crack (although it still tastes amazing even if it does crack). It's supposed to have that "not-quite-done" look in the middle when you take it out of the oven. This cheesecake is delicious and actually improves in flavor after a couple days in the fridge. very good and easy. i made it for my birthday . march 17
I made this recipe last night for a friends birthday. The only changes I made was to add a little more irish cream and I used a chocolate grahm cracker crust intead of nuts, just a personal preference. It came out beautiful, did not taste it yet, but I can hardly wait.

Made this for St. Patricks Day last year and it was awsome. I even bought the green sugar, printed the clover patten off the internet, cut it out and poured the sugar on. It turned out perfect. Looked just like the picture and even tasted better than it looked!!!!!
I have made this a few times and it is still popular with everyone!!! LOV IT!! I added 1/8th tsp mint flavor and a square of chocolate to give it just a hint of mint chocolate!! A BIG HIT!!!

absolutely DELICIOUS!!! Many, many rave reviews from friends and neighbors. I will be making this one again soon.
Not as rich as some cheesecakes I've made, but good, none the less. It was very creamy, but perhaps needed a bit more brandy for that unique 'taste'.
