Broccoli Rice Casserole

Broccoli Rice Casserole recipe
Rumor has it this broccoli casserole is always the first to disappear at a party. We think it has something to do with cheesy rice and a crunchy bread topping.

I really liked this recipe. The second time I made it I added 1/2 stick of margarine and a whole chopped onion and one clove of garlic mixed with sale to make a paste and it was even better. Garlic and onion go in everything I make, so this was a given.

This was sooo goood, I even got my fiance' to eat it. And he doesn't even like brocolli. Plus he already requested that I make it again. I am totally amazed.

I love this recipe. I make it at every family get together. My family loves it. I usually cook the rice before in some chicken boulion. Then add it in. Instead of using cream of mushroom I use one can cream of mushroom and one can cream of celery.

I really like this combinations of flavors in this dish. The only change I made was to use velveeta instead of Cheez Whiz. It does take awhile to make since everything is supposed to be cooked before putting the casserole together.

This year was the first Christmas that I've had to cook, so I thought I would make something familiar and it turned out really, really GOOD. I would definitely make this again, even without it being a holiday!

This is one of the first casseroles I made growing up. This recipe is a staple for family gatherings. I use a broccoli & cauliflower blend, cream of chicken soup, saute celery with the onions and omit the bread crumbs. Even my six-year-old who won't touch a vegetable will eat this casserole.
