Broccoli Rice Casserole

When kids who aren't big on veggies tell you they love this, it's a winner. Cheesy and yummy all mixed up with rice under a crunchy bread topping. Likewise for grown-ups.

What You Need

1/2

cup chopped onion

Tbsp. butter or margarine, divided

cups cooked rice

can (10-3/4 oz.) condensed cream of mushroom soup

pkg. (10 oz.) frozen chopped broccoli, cooked, well drained

cup CHEEZ WHIZ Cheese Dip

cup fresh bread cubes

Make It

PREHEAT oven to 350°F. Cook and stir onion in 1 Tbsp. of the butter in large skillet on medium heat until tender.

ADD rice, soup, broccoli and CHEEZ WHIZ; mix lightly. Spoon into 1-1/2-qt. casserole. Toss together remaining 1 Tbsp. butter, melted, and bread cubes; sprinkle over casserole.

BAKE 30 to 35 min. or until heated through.

Serve this side dish with a lean cut of cooked meat, fish or poultry and a mixed green salad tossed with your favorite KRAFT Light Dressing.

Special Extra

Garnish with green onion slices and red pepper strips.

Loved it!!! Even though my son said it looked 'yucky' when I was making it, he had two helpings and loved it. He even asked when I would make it again.

This was amazing my husband and I finished the entire casserole in two meals. I added more bread and used spray butter, I will be making this a few times a month and recommended it to all my friends.

I had several friends for a buffet dinner and this was one of the casseroles from your kitchen that I made. Everyone raved about it. I like a recipe that is simple to make and delicious and this is one.

This is an all-time family favorite! You can make this ahead of time an reheat it in the microwave. WE LOVE IT!
