I make this quite often the kids love it. The only thing I do different is add mild green chilies.

I didn't have the cilantro and I used just cheddar cheese because that's what I had on hand, but these were delicious!

My family loved it! I used green enchilada sauce instead of salsa, but served it with salsa and sour cream. Delicious!

This is a family favorite with my 4 kids and husband! I add a bit more salsa and cheese. I've also used this recipe to make quick and yummy quesadillas.

Delicious! I made these for my husband's birthday. I used garlic powder instead of buying a garlic bulb and used frozen diced onion instead of buying an onion. I didn't buy cilantro, and my husband doesn't like warm/heated salsa so I omitted that as well. Even with all the cheap routes and omissions, it was still excellent. My husband wants me to make them again, and he said they were better than his aunt's enchiladas.

A big hit with the whole family! The chicken and veggies can be cut up ahead of time and stored in the fridge (I love to make stuff in advance since I'm a new mom and trying to make things easy). I would add a can of green chilies next time to give it a little kick.
