I use a corn shell instead of flour as my boyfriend has gluten allergies. This recipe is always a hit every-time and is my absolute favorite!

They tasted really good. I used canned chuck chicken and made fiesta rice with corn and diced tomatoes with chiles. I think that it needs something to make it less dry. I put queso sauce and sourcream on top and that made a huge difference. I will make it again.

I also made this with whole wheat tortillas, rotel and made it once with chicken and once with the ground turkey meat. It was fantastic. I will not go out for enchiladas any longer. Awsome dish!

awesome - made it many times. used the precooked dice chicken for quick, easy and really good recipe. added black beans for additional protein! always goes well

Thought this was the Best Chicken Enchiladas ever! I made up a recipes for beef many years ago, but never even thought about chicken.It was very tasty and my husband and I enjoyed it very much.I served it with cheese dip and chips. This recipe is one I will make many times and share with my children. A keeper for sure.

This is one of our favorites!! I usually add more of both cheeses, half an onion, plus green and red pepper, and double the salsa. My fiance and I eat half for dinner, then have leftovers for lunch the next day. They are great served with sour cream!
