I make these enchiladas quite often...my family loves them! I also add a cup of cooked brown rice to the chicken mixture! I've also made this when we had company over and it was a big hit!

These were fantastic! The chicken filling was delicious. We used Fat-free cream cheese, and whole-wheat tortillas and cooked the chicken in a slow cooker with salsa before shredding. Quick, easy, healthy, and flavorful. This will become a stable meal at our house.

This is one of my favorites so far! Loved it so much. I also made mexican cheese dip and put some on top of them... so great with rice and chips & dip.

Loved this! I have made this recipe several times and just did a search for it because I am making it again tomorrow night. Very tasty and easy. I serve it with mexican rice.

These where the best enchiladas I have EVER tasted. I cannot believe I was able to make something that tasted so much like it was from a restaurant right at home. My 5 yr old would not eat this because if the way it looked but she never eats anything. My 3 yr old enjoyed it alot, I had to cut it up & feed it to her to get her to eat it.

I used whole wheat tortillas so they came out a little crunchier and it was better than what we have gotten at a restaurant!! My 10 year old daughter even loved this!!

Instead of the salsa I used 1 can Rotel tomato's and 1/4 of an onion, 2 tbl garlic, minced, 1/3 Reduced Fat Cream Chees. 100% Whole wheat tortilla's. What a winner! They were better than going out!

We forgot to add the cream cheese, but it didn't matter. My kids & husband loved this meal. It was quick & easy.
