What You Need

1/2

cup finely chopped onion

clove garlic, minced

Tbsp. butter or margarine

Tbsp. flour

1-3/4

cups milk

1/2

lb. (8 oz.) VELVEETA®, cut up

1/2

cup beer

1/2

tsp. Worcestershire sauce

Few drops hot pepper sauce

Make It

COOK onion and garlic in butter in large saucepan on medium-high heat until tender, stirring frequently. Add flour; mix well. Cook 2 min. or until hot and bubbly, stirring frequently.

STIR in milk until well blended. Cook until mixture boils and thickens, sitrring constantly. Reduce heat to low; simmer 5 min., stirring occasionally.

ADD remaining ingredients; mix well. Cook 5 min. or until VELVEETA is completely melted and soup is heated through, stirring constantly.

Friends and family loved this and I spent the day typing out the recipe for them-My little old Irish Grandmother , Made a soup almost like this and the older members of the clan remembered it and beged for the recipe.--It was that Good !!

My husband normally doesn't like soup but he LOVED this!! I also served it in a bread bowl which made it extra great!

My husband and I love this soup...we like to experiment with different beers each time. The only negative about this soup is that we get bellyaches shortly after eating, but that's usually alleviated if we take some Tums beforehand. I think all that cheese is a little much for our stomachs to handle, but the taste is definitely worth it! Oh, and try this soup in a bread bowl...it's delicious!

My boyfriends favorite food is beer, yes I said food. He's a picky eater and absolutely LOVED this soup! Definitely making it again, it was delicious, just make sure to use a good hearty beer that you enjoy drinking, and I suggest doubling the recipe as it's so good you definitely want more!
