I have been searching for a potato soup recipe, and tried many, this one is the best! I doubled the recipe and also added more cheese and bacon into the soup at the last step of cooking. Loved the extra cheese added, but adding more bacon at the end, instead of garnishing the soup with it was not a good choice. The bacon became soggy, and also made it really salty, since you add sale to the soup. That was my fault, not the recipe, and I can't wait to make this again! Everyone loved it. I also added a can of cream of potato soup to thicken it up a bit. Served it with the quick cheddar bread recipe from this site, and it was also great and complimented the soup. The bread tastes a lot like the biscuits from Red Lobster..yum I'm sure the calories for last nights meal were high, but it was all tasty, especially on a really cold night.
