I made this last night and it was wonderful. It appears runny at first but you really need to mash up the potatoes a little bit in the pot and let it simmer so the starch from them can thicken it up, and it thickens up wonderfully. I also used half and half instead of milk. My fiance is a VERY picky eater and he ate 3 bowls last night.
This was a hit! I had leftover baked potatoes - and didn't want to waste them - so I made this recipe. The whole family raved over it. I added extra potatoes and actually tripled the recipe. For the veggies and the bacon, I just added to taste. Used 2 % cheese, skim milk and topped with low fat sour cream - and the bacon was the pre-cooked kind - so very little grease. If you follow the basic recipe, you can add other things and not go wrong. I will add some corn the next time I make this also...
I added cubed ham to make it a meal. It did turn out a bit runny, but possibly because I doubled the recipe.
I used heavy cream in place of the milk and doubled the recipe. I also let the butter, celery and carrots sautee a little first and let the potato's cook with them for about 10 min first. This is awsome! I add chopped bacon and a big handful of chesse while it cooks! Everyone always asks for me to make this!

this was sooo good i made it last night. it turned out great. i added extra cheese for forgot to put in the green onions, but i didnt miss them
It came out a little thick, but other than that, delicious!
This recipe was very good and makes a lot so there is leftovers. My picky husband really liked it.
my husband asked me to make this soup almost everyday. Absolutly superb. Makes a great meal, especially on those cold fall days.
This is a very good soup. It is a meal in itself. My husband thought it was wonderful and said "Fix this all the time." This is a keeper.
