Everyone loved this recipe. I substituted red potatoes for the baking potatoes. I heated them up in the microwave before hand, it turned out just fine. I also substituted turkey bacon for the regular bacon. It was a hit with my family. Everyone was calling dibs for the last serving of it!

Very easy recipe. I use precooked bacon (can be found with salad dressings) to make it even easier. The irish soda bread is a nice compliment to this meal.

I made this soup for St. Patty's Day. I quadroupled the recipe in hopes to have leftovers ... No such luck. Everyone loved it so much that there wasn't a drop left to be had. I subsituted milk for fat Free Half & Half. It was great and I will surely make it again!
