I follow the previous person's suggestion to not use all of the coconut - I agree that worked out great. I doubled the recipe with no problems.

I made this recipe and we thought it called for too much coconut, so the next time I made it I added a can of drained fruit cocktail and it balanced out the coconut.

This recipe is also good with plain yogurt instead of the sour cream. You can mix and match fruits and colors that are available to you...like grapes, cherries, etc. for color and variety.

This is that special dessert or salad to make when you just want the special touch but without all the extra work! Easy to make, adds a delightful touch as a salad or a dessert, great with sandwiches or lasagne. ENJOY!!!

I make this recipe with a 20 oz. pineapple, drained; 15 oz. mandarin oranges, drained; 1 cup fresh green or red grapes. This is delicious, if you love fruit salad!

I use marachino cherries in the recipe and for Easter I use the colored miniature marshmallows for extra color. Doesn't change the taste much.

I sometimes add marachino cherries too, just to add some color.
