My family has enjoyed this recipe for as long as I can remember. We make it for practically every holiday and family gathering. I have introduced it to my in-laws, and they enjoy it as well. A couple of hints: 1) refrigerate overnight to 2 days so the sugar in the coconut mixes with the sour cream to give you a sweeter flavor; 2) do not let people know it contains sour cream if they don't like sour cream--they can't tell it's not if they don't know!

Substituted low fat yogurt for sour cream. This is my mother-in-law's favorite recipe and requests it for dinner often.

I have made this for a few friends and added toasted walnuts, sliced strawberries and blueberries as well as the toasted coconut, using the light sour cream and splenda for a few diabetic people who attended the party. It was a very big hit and everyone has asked fro the recipe, which they have now. I will be making it again for a family yard party.

This receipe is very good and easy to make. I add chopped walnuts to it along with some acini de pepe noodles and it is wonderful. I make it often and have people begging me to make it at all my holiday functions.

I have been making a "7 Cup Salad" for years.....adding fruit cocktail, bananas, pineapple, mandarin oranges, mini marshmallows, pecans and coconut. To lighten the sour cream, I use half lemon yogurt and half sour cream.
