I made miniature cheesecakes with this recipe. I added another tablespoon of fresh lime juice because it tasted like a regular cheesecake with only 2 tablespoons. I used 42 miniature muffin paper liners, put a mini vanilla wafer in the bottom of each liner, filled each one almost full, and then cooked at 350 for about 14 minutes. It didn't take long for the cheesecake bites to chill. I topped with whipped cream before serving. Delicious!

My family loves this cheesecake, they always ask me for it at every event, very easy to make and delicious.

I made this recipe and used my muffin tin to make individual "cupcake size" desserts! I just cut the baking time in half. They were a huge hit! Next time I am going to try the mini muffin tin for little cheesecake bites! YUM! Definitely a keeper!

I was very disappointed with this recipe. I followed it to a "t" and couldn't taste the lime at all. It tasted like a regular cheesecake.

This was a great cheesecake-very refreshing and pretty. Mine had no cracks. It disappeared quickly.

Wonderful, wonderful! Great hot weather dessert. Key limes give it just the right kick of tartness. Good enough for guests or any occasion when you want to impress with little work involved. Two thumbs up.

Made this for my husband to take to his company's St. Patty's Day Party and it was a huge hit! I also made one for us to keep home. I would definitely recommend it seeing as it requires little time and ingredients and tastes amazing! Try it you will be pleasantly surprised it's not an overpowering lime taste very subtle yet unique and refined. I will definitely be making this again and perhaps it will be my little bit of something green just for fun and celebration that I make every St. Patty's Day :)
