This is very similar to a recipe my husband and I love. I cook a box of Kraft macaroni as directed while browning 1 lb of ground beef. When both are done, I add them together with 1 can chili beans (unrinsed, in medium sauce), and a few spoonfuls of salsa con queso. Easy and yummy!

My husband can not get enough of this recipe! He is lactose intolerant so I am able to make a dairy free dinner for him and add the cheese, sour cream, and other bad stuff to mine!

I make this recipe about once a month and the only change I make is to add a little taco seasoning to the meat after draining it. It's great and I serve it with cornbread on the side.

I added corn and cooked the macaroni seperate. I used taco seasoning and adjusted the amount of liquid a bit. I served it with flour tortillas, and we put some on the torilla kind of like a burrito.

I added frozen corn also. Next time I would add more spices and salsa to add more flavor. Wasn't as "mexican" tasting as I would like. But a quick and easy dish for sure.

I'VE MADE THIS DISH SEVERAL TIMES AND EACH TIME I CHANGE IT A LITTLE. I COOK THE MACARONI SEPARATE, BUT MAY ADD FROZEN OR MEXICAN CORN, OLIVES, CHEESE, ONION AND OR TACO SEASONING. IT'S A CROWD PLEASER EACH TIME.

I love the way you can variate the ingredients to suit your own taste. I know I will be making this on a more frequent basis. its quick and easy and 1 pot cooking makes for a easy clean up.

I would make this again - however - I would recommend boiling the noodles instead of cooking them in the pan with the rest of the dish and then adding them after they've cooked.
