Hearty Golden Chowder

We loved this chowder! I doubled everything except the potatoes. I will add more cheese next time. The veggies were done just right. :)

cups cold water

cups chopped potatoes

1/2

cup sliced carrots

1/2

cup sliced celery

1/4

cup chopped onion

Tbsp. chopped fresh chives

tsp. salt

Dash pepper

1/4

cup (1/2 stick) butter or margarine

1/4

cup flour

cups milk

cups KRAFT Shredded Sharp Cheddar Cheese

Make It

BRING water, vegetables, chives and seasonings to boil in medium saucepan on high heat. Reduce heat to low; cover. Simmer 10 minutes. Do not drain.

MELT butter in large saucepan on low heat. Stir in flour. Cook 2 minutes or until bubbly. Gradually add milk, stirring until well blended. Cook on medium heat until mixture boils and thickens, stirring constantly. Add cheese; cook until melted, stirring constantly.

ADD vegetable mixture; cook until heated through. Do not boil.

The soup was too cheesy for me, but I am not a big fan of cheese. However, all of my friends loved the soup. I probably make it again if I have guests over because it was an easy recipe.

This is a very, very delicious chowder! Served it at a soup tasting party and it was the favorite! Have already made it several more times and will keep it as a permanent recipe.

My hubby just loved this soup! I used chicken broth instead of water to cook the vegetables, which added more flavor to the soup. Kind of time consuming, but tasty and flavorful.

The BEST soup I have ever tasted!!! Wow....I haven't ever made my own soup from scratch before so I thought making this chowder would be really hard----it turned out to be fairly simple AND definitely delicious! We had it as a side dish with salad and baked chicken but it is so yummy that I will be making it as a main course from here on out.
