Spinach Lasagna

What You Need

eggs, beaten

container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese

pkg. (10 oz.) frozen chopped spinach, thawed, well drained

cups KRAFT 2% Milk Shredded Mozzarella Cheese, divided

1/2

cup KRAFT Grated Parmesan Cheese, divided

jar (24 oz.) spaghetti sauce, divided

lasagna noodles, cooked

Make It

HEAT oven to 350°F.

MIX eggs, cottage cheese, spinach, 2 cups mozzarella and 1/4 cup Parmesan.

LAYER 1 cup spaghetti sauce, 3 lasagna noodles and half the cottage cheese mixture in 13x9-inch baking dish. Repeat layers. Top with remaining noodles, sauce and cheeses.

BAKE 45 min. or until heated through. Let stand 10 min. before serving.

Just made this recipe for dinner. Just what I was looking for...a lasagna recipe that was a balance of flavor, comfort, but not heavy in my tummy. Easy to make, too. I made one modification. I cooked down baby spinach vs. using frozen.

Absoluty delicious. Used fresh spinach and included diced mushrooms, diced garlic and chopped basil. Used ricotta cheese instead of cottage cheese. Ingredients bleend well together not overpowering and giving just the right flavor.

I have made this many times. I don't boil the noodles first. I make the recipe as is only I put the noodles in uncooked, cover and cook for 1 hour. Turns out great and WAY easier! Just make sure you save some of the cheese mixture to put on the top noodle so it cooks better. :)

It was pretty easy to fix. I especially love spinach, and I like recipes that have it. I served it to friends who also liked the flavor. I will serve it again soon.

There are no words to describe how yummy this recipe is!!! And I've only tasted it, warm out of the oven, before getting it into dishes for my lunches!!!! I cannot WAIT to eat lunch tomorrow!! The little bit I ate is HEAVENLY!! This is my new, favorite lasagna!!!!

I can't believe that I haven't rated this recipe yet. I've been a member for a few years and this was one of the first recipes I made and still love. I'd rather have this spinach lasagna than any meat lasagna. Absolutely Delicious :)
