I added some chopped carrots, zucchini, and mushrooms to the spinach mixture because we like lots of veggies. I also added some crushed garlic for flavor, and I used half lowfat cottage cheese, half part skim ricotta cheese. I also added a small can of italian seasoned diced tomatoes to the spaghetti sauce to make it a little juicier. It turned out well, and my family really enjoyed it. We felt it was healthier than a traditional meat lasagna.
