Easy Chocolate Eclair Squares

Super easy. Layers of vanilla pudding and Cool Whip along with sweet graham crackers stack up to the most popular dish at the potluck. Sorry, other squares.

What You Need

pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding

cups cold milk, divided

tub (8 oz.) COOL WHIP Whipped Topping, thawed

HONEY MAID Honey Grahams

pkg. (4 oz.) BAKER'S Unsweetened Chocolate

cup butter

1-1/2

cups powdered sugar

Make It

BEAT pudding mix and 1-3/4 cups milk in large bowl with whisk 2 min. Stir in COOL WHIP. Layer about 1/3 of the grahams and half the COOL WHIP mixture in 13x9-inch pan, breaking grahams as necessary to fit; repeat layers. Top with remaining grahams.

MICROWAVE chocolate and butter in medium microwaveable bowl on HIGH 1-1/2 min., stirring after 1 min. Stir until chocolate is completely melted. Add sugar and remaining milk; stir until well blended. Immediately spread over grahams.

REFRIGERATE 4 hours.

Latte Eclair Squares

Prepare as directed, substituting 3/4 cup chilled brewed strong MAXWELL HOUSE Coffee for 3/4 cup of the milk used to prepare the pudding.

How to Thaw COOL WHIP Whipped Topping

Place unopened tub in refrigerator. An 8-oz. tub will be completely thawed in 4 hours. Do not thaw in microwave.

Variation

Prepare as directed, using fat-free milk, JELL-O Vanilla Flavor Fat Free Sugar Free Instant Pudding, COOL WHIP LITE Whipped Topping and HONEY MAID Low Fat Honey Grahams.

Per the receipe, there was not enough topping for the 13/9/2 pan. I had to double the chocolate squares,milk,butter,confectionary sugar. However, I would make the receipe again and everyone enjoyed it at Father's Day dinner.

I made this recipe with fat free cool whip and fat free pudding to save on calories and fat grams. Turned out great. I did use the canned icing for this recipe.

I have a variation of this recipe from an old Cool Whip book. Instead of making the icing you use a container of ready-to-spread chocolate fudge frosting heated in the microwave until pourable. Spread this on top of the last graham layer. This makes it simple and very yummy.

the frosting did not work as was written- the chocolate separated from liquid!!!!! I did it twice- whole milk, real butter

I made the éclair recipe for my bridge group and they like it; they said it doesn't seem real sweet. I used light cool whip, crackers and Jell-O. Will bake again for a large crowd. I did add a 1/2 tsp. vanilla to the chocolate frosting
