I started making this over 7 years ago. I have to make a double recipe every time. It's one of my most requested recipes to make when I have guests over. This is a no fail recipe. I make the meat mixture up before I go to work and let it set all day in the fridge. When I get home I finish off the recipe. That's the best way or make it before bed and reheat it the oven and add mashed potatoes. It's always better the next day.
Very simple, easy, and tasty recipe. I would recommend it to anyone looking for a quick dinner. I made this with the asapargus and honey mustard recipe. Great combo.
My husband loves this recipe. I used homemade mashed potatoes instead of instant.
I consider myself a decent cook and was very excited to find this recipe since it was rated so highly. My husband complains b/c I never make meatloaf. I followed all instructions and it looked very good. The flavor was pretty bland and the potatoes had no flavor, really. I was truly disappointed at the outcome.
Although this recipe was fairly tasty, I will stick to my old meatloaf recipe. And there is no way to get the cheese to stay on the top without using a meatloaf pan.
I've already made this twice and it tastes so nice :) the meatloaf always turns out very moist and the presentation looks great!
The mashed potatos were AMAZING! It was such a GREAT tasting meat loaf. I was a little worried about putting american cheese on top but it was surprisingly good. I put chopped onions and green peppers in it too. This was my first but I think im sticking to this one. Both my husband and picky daughter loved it.
really good, loved that it was almost a full meal in one! Very filling and yummy, althought I did substitute the bbq sauce for my own and it still tasted fine!
The flavors of this dish were really good. I put garlic powder in the mashed potatoes, and used shredded Cheddar since that was what I had on hand. Next time I will either bake it for less time or use 1-1/2 lbs of meat because the meatloaf part was a bit dry.
Husband liked it; a little 'loose' for me. Reheats nicely. Added left over mashed to that called for in rfecipe to 'stretch'.
