I didn't add sausage, it was wonderful. My parents really liked it. It was something different from pancakes or bacon and eggs. Great idea!!! WILL make again.

I made this recipe for the employee brunch two weeks ago and now I'm known as Country Breakfast Lady. Everyone ask for second. I added slice sauteed mushroom.

I make this using premixed O'Brien hashbrowns from the dairy section of the grocery store, they come with the potatoes, green peppers and onions. I scramble my eggs as well, as that's the way my family likes them done. It's super easy and we usually have this once or twice a month. Guests are always excited to wake up to such "restaurant quality" food!

I made the country breakfast recipe & it was very, very, very good. It not only was easy to make, but extremely delicious. I have to say that the potatoes I used were the small red potatoes. Again, this is very good & I will definitely make it again & again. Thanks, Donna
