I made these for Christmas gifts and everyone LOVED them. My husband's work keeps asking for more. Very simple to make too.

It had a very interesting taste. First you get a taste of coconut and then a BURST of raspberry. It was good. However, there was a lot of liquid pooling in the pan after I made it. I think before I made it again I would try to adjust the ingredients just a bit. I may have used too much margarine in the crust.

Do not use a dark pan as the bottom layer burns very easily. Advise checking after 15 minutes. Very easy to make.

Have made many bar type cookies and have never tasted any as delicious as these. They were excellent and not very hard to make at all. Your family and guests are sure to love them. I made them with regular raspberry jam and also unseeded raspberry jam. I also used the same recipe and in place of the raspberry jam I used pineapple preserves. They were excellent.

I have the same recipe that my mother in law always made except it has slivered almonds added to the meringue before baking and then some sprinkled on top. It has been a holiday favorite for as long as I can remember. Be sure to use real butter as the shortbread bottom is the best.

Turned out very good, love the taste. I think it may have a little too much butter though. The middle wasn't as cooked as I would like although I baked it for the time specified. I would make this again though.
