BAKER'S ONE BOWL Raspberry-Coconut Bars recipe

I made these for company, and they were SUPERB! Was impresed with how easy they were to make, and fast!

What You Need

1-1/4

cups flour

1/4

tsp. salt

1/2

cup (1 stick) cold butter or margarine, cut up

Tbsp. cold water

eggs

1/2

cup sugar

pkg. (7 oz.) BAKER'S ANGEL FLAKE Coconut

1/3

cup red raspberry preserves

Make It

HEAT oven to 425°F. Mix flour and salt in medium bowl. Cut in butter until mixture resembles coarse crumbs. Gradually stir in water with fork until well blended; press onto bottom of 8-inch square pan.

BAKE 20 min. or until lightly browned. Reduce oven temperature to 350°F.

BEAT eggs in same bowl with mixer on high speed until frothy. Gradually add sugar, beating until thick and lemon colored. Stir in coconut. Spread preserves over crust to within 1/4 inch of edges; cover with coconut mixture. Bake 25 min. or until golden brown. Cool completely before cutting to serve.

This was the greatest hit for the holiday. I made the recipe four times. It is very attractive and stores easily.

Very Good!! I used my mothers homemade strawberry jam and drizzled chocolate on the top. It came out excellent!! Would like to possiblly try some kind of ground nuts in the bottom half. Will make again!

I varied the recipe somewhat, in order to make the cookie look more "Christmasy". I tinted the coconut green, by using green food color. Also, instead of using raspberry jam, I used apricot jam instead. They came out delicious. Would definitely make again. Quick and easy.

I LOVE TO COOK BUT BAKING IS MY PASSION. WEEKLY I BAKE WITH A VERY SPECIAL PERSON, MY 11 YEAR OLD NEPHEW. WE CHOOSE FROM YOUR RECIPES. THIS WEEK WE MADE THIS ONE. WE LET THE COCONUT TOPPING TURN A GOLDEN BROWN. IT WAS A SUCCESS! WE WILL DO THEM AGAIN PRONTO! WE MADE THEM IN A TOASTER OVEN AND DIVIDED THE BATCH IN TWO PANS. KEEP UP THE GOOD WORK!

Because of the previous reviews, I added more jam than what the recipe called for and it came out very mushy. The jam was the only thing that you tasted. I am sure that I put way too much but for future bakers...stick to the recipe!

I wish I would of added more jam, but it turned out very tasty nonetheless. I would definitely make this again. All 3 kids loved it and husband too!

You need to add more raspberry jam, but otherwise this is a wonderful, easy recipe.

I followed the directions but it came out very undercooked. I don't know what I did wrong but it was a disaster. I wouldn't make this again and I wouldn't recommend this to anyone.
