Chicken-Taco Cornbread Pie

A Mexican standard takes cover under golden cornbread to create this warm, comforting chicken bake. Best of all, prep is a quick 10 minutes.

What You Need

Tbsp. oil

1-1/2

lb. boneless skinless chicken breasts, chopped

green pepper, chopped

pkg. (1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix

3/4

cup water

cup KRAFT Shredded Cheddar Cheese

pkg. (8-1/2 oz.) corn muffin mix

Make It

HEAT oven to 400°F.

HEAT oil in large skillet on medium-high heat. Add chicken; cook and stir 5 min. or until done. Stir in peppers, seasoning mix and water. Bring to boil; simmer on medium-low heat 10 min., stirring occasionally.

SPOON into 9-inch pie plate; sprinkle with cheese. Prepare muffin mix as directed on package; spoon over cheese, completely covering cheese layer.

BAKE 20 min. or until golden brown. Let stand 5 min. before serving.

Cutting raw boneless chicken breasts into pieces is a slippery task. Make it safer and prevent the knife from slipping by cutting the chicken while it is partially frozen.

I tried this recipe with ground beef (didn't have any chicken) along with rotel and it was awesome! Will definitely make it again!

I made this for dinner last night & my family LOVED it! (We all love cornbread though). I added a diced onion, bell pepper & rotel & browned and then added the chicken. I also drained some whole kernel corn and added. It was delicious!

This is not okay! This is fantastic! When I tell people the name, they say, "What?" But when they taste it, they love it! If you like tacos, then you will love this. It is filing and only needs a salad on the side. Perfect for the whole family and will be the hit at any pot luck! I added onions too.

This recipe is pretty good. I used Mexican-style cornbread with jalapenos in it & it was nice and spicy.

This is a very good lunch or dinner. I have a mexican boy friend. His father was from old Mexico and his mother is German. Both his parents were proud of how they were. So in cooking for him I am learning that just adding chillies dosen't make something Mexican. I added some homemade Pico to the corn bread and 2tbls. Hot pepper juice. Serve with a salad and sour cream. I have to make 2. He likes to take one to the office for lunch, the next day. He states that it's better.
