I made this for my husband (a major cornbread lover) and he absolutely loved it! I substituted green peppers for yellow and it came out delicious. I will be making this again :)
My picky bunch loved it, I added diced jalapenos and a little sugar to the cornbread and used mexican blend cheese, this was simple and quick.
My husband thinks most of my meals are just o.k., but he said this one was great and he even mentioned that his brother might even like it. he loved the cornbread crust and the chicken filling instead of beef. this would be great for a pot-luck, only i'd take 2!
I really liked this recipe. I am not able to rate the exact recipe due to me not having bell peppers on hand. I ended up adding 1/2 an onion, can of corn, and can of black beans rinsed along with 2 boxes of muffin mix because I love corn bread. The taste was awesome, so yummy.
Wow, i was also skeptical about this recipe but it was great. I didn't add as much pepper because of family preferences, used my own cornbread recipe, and probably added a little more cheese (don't measure cheese in the south, lol) and i really was impressed, try it.
Absolutely AWESOME recipe! We loved it. the things I did differently - I made the cornbread and didn't use a boxed mix and I used red pepper instead of green. It was just perfect!
I read the reviews on this recipe & decided to give it a try; it was delicious - even my teens loved it! I added corn and onions though (like other reviews), omitted the green pepper and used Mexican Fiesta seasoning mix. I recommend this recipe and will be making this again!

My family loved this recipe and I have to double it now...though I did add some black beans to give it a little more.
I made this tonight and my family loved it! I added a can or corn and onions and baked it in a 13x9 innch glass dish! I had to use to boxes of corn bread but my picky family ate it all! There was nothing left! Then I told them the ate onions and green peppers and they laughed and told me to make it again!
