10-Minute Cheesy Mexican Rice recipe

This is a simple side to use for Mexican night. We use medium salsa & shredded cheese. Adding cooked, diced chicken and corn makes it a quick meal.

I really like this recipe But i did add to it to make it spicer, pack of mild taco seasoning & cut up chicken breast, It was sooo good!

This was so very easy to make and we all loved it!! A nice variation to have as a side dish-not like plain rice-very flavorful!

I really liked this dish except I changed a few things, I only had regular rice. I put it all in my rice cooker add I waited until the rice was almost done and then I added the cheese. But using the regular rice was very tasty.

VERY SIMPLE and VERY FUN! We like to make it and mix in cubed chicken. Instant yummy tacos!

This was great. Everyone loved it. I bought 'boil in the bag' rice by mistake and cooked the rice as directed on the package and added the cooked rice to the boiling salsa and chicken broth, then added the cheese. There wasn't a single bite left!
