10-Minute Cheesy Mexican Rice

10-Minute Cheesy Mexican Rice recipe

This is a simple side to use for Mexican night. We use medium salsa & shredded cheese. Adding cooked, diced chicken and corn makes it a quick meal.

It wasn't too bad, my husband thought it was good. Really easy to make. I used Cheddar instead of Velveeta cheese and I also added Tostito brand cheese dip. Also I added some taco seasoning to the chicken broth and used rotel instead of salsa.

this was just ok....i think i messed it up somehow, the rice was too hard.

I used Mexican Velveeta & added 1/2# browned ground beef. My family loved it & wanted more when it was gone!

This recipe was good, but it really makes a lot so I would probably only make it again if I were taking it to a potluck or something. I found that I am not a huge fan of the Velveeta stuff.

I added a can of Ro-Tel tomatoes to the recipe, which spiced it up quite a bit, which made it better for me because I like a little "kick!"

I would have added maybe 2-4 more ounces of Velveeta, but it was great either way.

I loved this recipe. Even when I putit on the plate, it looked like something that had been cooked in a restaurant. Will definitely make again.

I used to make this quite often. However I made some changes. I cook my rice with the salsa and broth. Brown either chicken or ground beef with taco seasoning pack. I then mix together the meat, rice and cheese (add cheese last, i prefer cheddar). I have even added drained black beans and corn. This makes it a meal instead of a side dish. Top with salsa and sour cream.

Loved it! It was very easy (my 11 year old daughter made it) and was a hit with everyone in the family.
