What You Need

NILLA Wafers, finely crushed (about 1 cup)

Tbsp. butter or margarine, melted

1/2

tsp. ground cinnamon

env. KNOX Unflavored Gelatine

can (8 oz.) crushed pineapple, drained, liquid reserved and divided

pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

3/4

cup sugar

tub (8 oz.) COOL WHIP Whipped Topping, thawed

Make It

MIX wafer crumbs, butter and cinnamon; press onto bottom of 9-inch springform pan.

SPRINKLE gelatine over reserved pineapple liquid in small saucepan. Let stand 1 min. Cook on low heat 5 min. until gelatine is completely dissolved, stirring occasionally. Beat cream cheese and sugar in large bowl with mixer until well blended. Gradually beat in gelatine mixture until well blended. Refrigerate until slightly thickened.

WHISK pineapple and COOL WHIP into cream cheese mixture; pour over crust. Refrigerate 5 hours.

Place completely unwrapped package of cream cheese in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened. Add 15 sec. for each additional package of cream cheese.

I've served this cheesecake to many of my guest and everyone has asked me for the recipe. Now when ever I go to a family function, I'm asked if I'll be making that cheesecake I ate at your house?

This recipe was the bomb!! My husband and I made this recipe together, and it was a nice time. I was very easy to make, and I look forward to making this in the near future. Our guest ranted and raved all night.

I made this for my friend and I and then brought it into work for the next day, everyone loved it! The pinapple was just right, not too rich. I will make again.

I've already made this cheesecake twice. Everyone raved about it. It's quick and easy to make. I love cheesecake, but sometimes the baked kind is just too rich. This is not.

This cake is simple to make but looks and tastes superb. I make it for company and everyone loved it and couldn't get enough they also said it's such a great change from the usual cheesecake. A keeper.
