If you like cheesecake, and you like pineapple, you will love this pie!!! I don't make the crust - I buy pre-made graham crusts and this recipe makes enough for two pies that way. This is the best pie ever, and it keeps well. Perfect for a holiday celebration or a family reunion. I hope you enjoy it as much as I do!!

I served this pie to my small quilter's group and they loved it..I did change the crust to the crust from the Golden Pineapple Pie, made with blonde Oreo's..it was very good and I will make it again.

I finally had a chance to try it with gingersnap crumbs and it was wonderful. It becomes a little more tropical each time I make it. I am going to try adding some grated candied ginger to the filling the next time. Eventually I will have a whole specturm of fillings and crusts based on a wonderful basic recipe.

I used the reduced fat pie crust and it was good but there was too much filling for the crust. I would definitely make it again.
