What You Need

cups chopped cooked chicken or turkey

green pepper, chopped

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed

1/2

cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa, divided

flour tortillas (6 inch)

lb. (4 oz.) VELVEETA®, cut into 1/2-inch cubes

Tbsp. milk

Make It

HEAT oven to 350°F. Mix chicken, peppers, cream cheese and 1/4 cup salsa in saucepan; cook on low heat until cream cheese is melted, stirring occasionally.

SPOON 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam-sides down, in lightly greased 13x9-inch baking dish; set aside. Cook VELVEETA and milk in saucepan on low heat until VELVEETA is completely melted, stirring frequently. Pour over enchiladas; cover with foil.

BAKE 20 min. or until heated through. Top with remaining salsa.

My husbands all time favorite recipe! I always make much more Velveeta sauce so I can cover the enchilada's completely, and I add more cream cheese (I LOVE cream cheese!). Top with sour cream...awesome! Oh, and if you cut up the chicken and green pepper earlier in the day, preparation is MUCH faster!

Very good recipe - I recommend doubling the velveeta sauce, it really didn't make enough to cover the enchiladas. I also used onions instead of green peppers - delicious!

This was fabulous! I used onions instead of green peppers and melted some Velveeta with the chicken, then topped the tortillas with 4 oz of Velveeta as the recipe calls for. I also used a little sour cream on top. It was delicious!!!

My kids are picky eaters and do not like Mexican food all that much. They absolutely loved this. I used chicken fajita meat and it was absolutely great!

Yummy! My husband and son couldn't get enough. It was not the fastest meal to prepare, but it didn't take very long overall and was well worth the wait when done.
