My whole family liked this meal, which is great because we have a hard time finding Mexican meals that aren't too spicy for our little ones.

I didn't have any cream cheese so I used extra Velvetta instead. It was really good.

My Husband told me that this tops the list on one of the best meals I ever made! I seasoned the chicken with red pepper, garlic, and pepper. We also are not fans of Velveeta, so I just used Kraft's shredded cheddar cheese instead. Very easy to make and delicious! I will definitely be making this again and again!

Very good! Everyone loved this even the kids. I did add green onion, garlic, and shredded cheese to the chicken mix. Plus I doubled the velveeta. Wonderful. Will be making again soon.

These enchiladas are very easy to make and have a wonderful flavor that can be enjoyed by the whole family! And the leftovers are just as good as the originals!

This recipe is so good and very easy to make. The only thing I do differently is I shred the chicken and add some extra cream cheese it will make it creamier and smooth and a lot easier to roll.

These are easy, and surprisingly good. Used spicy salsa to heat it up a bit, otherwise it may be a little bland.

Not only have I made this recipe - I have made it several times and my boyfriend LOVES it. If he knows I am making it, he makes sure not to eat for a while before coming over so he can have second and third helpings! A must try!
