This was a hit at my house. My son ate all the leftovers I usually have to eat for lunch at work and raved about how good it was. I served it with hot squash soup as a starter and a green salad on the side.

this was very good! i changed it just a little.. i mixed the feta with roasted red pepper vinagrette and garlic. added extra feta and parsley along with the peppers once it was out of the oven. It's a keeper!!!

Instead of doing this in a skillet I did it in the oven, I sprayed the pan with pam, placed the chicken down, poured the tomatoes and sliced onion on top baked in the oven till the chicken was done, crumbled on the cheese let it melt and served! I served this with the (green beans and tomatoe Italian and the creamy cauliflower). Got rave reviews from the dinner party!
