What You Need

lb. lean ground beef

1/2

cup chopped onions

1/2

cup chopped green peppers

2-1/2

cups TACO BELL® Thick & Chunky Salsa

can (11 oz.) whole kernel corn, drained

tsp. chili powder

tsp. ground cumin

corn tortillas (6 inch), divided

container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese

cup KRAFT Shredded Sharp Cheddar Cheese

can (2-1/4 oz.) sliced black olives, drained

Make It

HEAT oven to 375°F.

BROWN meat in large skillet; drain. Return meat to skillet. Add onions and peppers; cook 3 to 4 min. or until crisp-tender, stirring occasionally. Add salsa, corn and seasonings; mix well.

LAYER 1/3 of the meat mixture and half each of the tortillas and cottage cheese in 13x9-inch baking dish. Repeat layers; cover with remaining meat sauce. Sprinkle with cheddar cheese and olives.

BAKE 30 min. or until heated through.

BOCA Mexican Lasagna

Substitute 2 pouches (1 cup each) frozen BOCA Ground Crumbles for the ground beef. Prepare as directed, adding the crumbles with the salsa, corn and seasonings. No need to cook first!

Keeping it Safe

Be sure to thaw frozen ground beef safely. Keep the meat wrapped and thaw it, on a plate, on the bottom shelf of the refrigerator. Do not thaw the meat on the countertop.

Easy recipe that received rave reviews from my husband, he ate almost the whole pan! I used low carb tortillas and only used 4 of them. Next time I might try a spicer salsa and maybe some chopped green chilis.

This was just awesome! I used whole grain wheat tortillas and used 2 cups of chedder cheese on top instead of 1. It was amazing!

Very easy to make! Great week night dish! I used Chipoltle Chili Pepper in place of the chili powder and it really kicked up the spice! I also substituted Mexican Blend Cheddar cheese for the sharp cheddar. The family loved it!

I used ground turkey and substituted taco seasoning. I also used flour tortillas instead of corn. And I X'd the cottage cheese. I baked the lasagna for 15 min. instead of the suggested 30 min. Served with sour cream-huge hit with my husband!

This recipe was great. I will definitely make it again. I used fat free cottage cheese and 2% mexican style shredded cheese. You couldn't even tell that it was low fat. My husband loved it. It will definitely be one of our favorites.

Really really yummy and easy to make! I left off the Olives. I make this about twice a month! Love it!!!
