What You Need

lb. lean ground beef

1/2

cup chopped onions

1/2

cup chopped green peppers

2-1/2

cups TACO BELL® Thick & Chunky Salsa

can (11 oz.) whole kernel corn, drained

tsp. chili powder

tsp. ground cumin

corn tortillas (6 inch), divided

container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese

cup KRAFT Shredded Sharp Cheddar Cheese

can (2-1/4 oz.) sliced black olives, drained

Make It

HEAT oven to 375°F.

BROWN meat in large skillet; drain. Return meat to skillet. Add onions and peppers; cook 3 to 4 min. or until crisp-tender, stirring occasionally. Add salsa, corn and seasonings; mix well.

LAYER 1/3 of the meat mixture and half each of the tortillas and cottage cheese in 13x9-inch baking dish. Repeat layers; cover with remaining meat sauce. Sprinkle with cheddar cheese and olives.

BAKE 30 min. or until heated through.

BOCA Mexican Lasagna

Substitute 2 pouches (1 cup each) frozen BOCA Ground Crumbles for the ground beef. Prepare as directed, adding the crumbles with the salsa, corn and seasonings. No need to cook first!

Keeping it Safe

Be sure to thaw frozen ground beef safely. Keep the meat wrapped and thaw it, on a plate, on the bottom shelf of the refrigerator. Do not thaw the meat on the countertop.

I have a picky husband and five real picky kids. They all loved this recipe. It was easy to make. I just double the seasoning. It had plenty of flavor. I will definately make it again.

I thought this was pretty good but had a little bit of a boring taste. I think next time I'll add more seasonings and cheese, but I'll definitely make it again!

My husband and I LOVE this recipe. I add a can of black beans as well and it makes it that much better!

Very good. I used black beans instead of meat and it turned out great. Also used con with peppers and black beans with jalapenos instead of the onions and peppers. Turned out great.

I served this to friends after first trying in on family. Everyone loved it. I added a can of drained black beans to the meat mixture, and that was a good idea. I will definitely add this to my permanant recipe file.

I made this for some missionaries that came to the door. They said that after eating mac & cheese for 6 months, this tasted like heaven. I made a 9 x13 pan and they ate the whole thing!

Easy to make and delicious! I increased amount of spices. Makes lots and holds up well to eas as a leftover.

This lasagna is very tasty! I read the other comments and took some advice on what to add. I added jack cheese to my cottage cheese and doubled on the seasonings. It was very delicious! My boyfriend loved it so much he almost ate the whole pan!
