Corn tortillas take the place of pasta in this Mexican-inspired lasagna. A meaty sauce of onions, peppers, salsa and corn brings it all together.

I made this for some missionaries that came to the door. They said that after eating mac & cheese for 6 months, this tasted like heaven. I made a 9 x13 pan and they ate the whole thing!
Easy to make and delicious! I increased amount of spices. Makes lots and holds up well to eas as a leftover.
This lasagna is very tasty! I read the other comments and took some advice on what to add. I added jack cheese to my cottage cheese and doubled on the seasonings. It was very delicious! My boyfriend loved it so much he almost ate the whole pan!
Really good! We added black beans and jalapenos to the recipe because we don't eat peppers or onions. It turned out great & was very easy to make.
This was a great recipe! I added black beans and a little extra chili powder to give it a little more kick. We like things spicy, so I added jalapenos on the top layer. Will make this again!!
VERY YUMMY!! I've been making this type of dish for 3 years and its one of my husband's favorite dishes. Here are a few alterations to make it even beter. I suggest adding shredded jack cheese to the cottage cheese layer to make it a little more creamy tasting. Instead of salsa you can also use diced tomatoes, but be sure to add more seasonings to meat. I've tried making this dish with the corn tortillas "raw"and slightly fried in oil and I think that it's better when the tortillas are cooked- the recipe comes out less "mushy". I always use sour cream as a garnish, and serve with white rice.
I've been making this type of dish for a few years and it is almost always well received. I add a extra chopped onion, green pepper and tomato to the top along with the cheddar cheese and server with sour cream and taco sauce. It's a nice basic dish that you can use with a ton of variations.
I add drained, canned, black beans to mine, yummy! I am alergic to olives, so I leave them out. We really like this, and leftovers freeze well if you have a small family like mine.
Tasted suprisingly excellent. It was so easy, and with the cottage cheese I wasn't sure it would taste good. But it was excellent, and a nice different type of lasagna. I will keep this and add it to my monthly meals.
