Mediterranean Chicken Breasts

Boneless chicken breasts are cooked in a flavorful coating of bread crumbs, pecorino Romano cheese and basil until tender and crispy.

What You Need

1/3

cup DI GIORNO Grated Pecorino Romano Cheese

1/4

cup dry bread crumbs

tsp. dried basil leaves

1/4

tsp. paprika

1/4

tsp. salt

1/4

tsp. ground black pepper

small boneless skinless chicken breast halves (1-1/2 lb.)

1/4

cup plain nonfat Greek-style yogurt

cups hot cooked couscous

Make It

MIX first 6 ingredients.

DIP chicken in yogurt, then in cheese mixture, turning to evenly coat both sides of each breast.

COOK in skillet sprayed with cooking spray on medium heat 5 to 7 min. on each side or until done (165ºF). Serve over couscous.

Substitute

Prepare using DI GIORNO Grated Parmesan Cheese.

Special Extra

Add 1/4 cup minced bell peppers to the couscous and top the chicken with 1/4 cup chopped fresh parsley.

Excellent with a few adjustments. Instead of oil to make the bread/cheese mixture stick, I used sour cream to coat the chicken and then coat it with the bread crumbs/cheese mixture. I also baked it at 400 degrees for 20 minutes instead of doing it stove top. I will use this as a regular meal during the week.

Pound out the breasts for even cooking. So easy and delicious!

It was good, but I think the chicken would be better baked rather than cooked in a pan so that the topping would stick better.

This was a very good recipe. I made it last nite for my friends in a college oncampus apt w/o a regular stove. (on a 2 eye hotplate) The crust stayed on relativly well and everyone loved it. I will definitely have to make this for my parents when i go home for a visit.

Tried this recipe last night. I used fresh basil instead of dried basil. It was easy to prepare and it tasted great. Definately a recipe I will try again.

Great recipe! The breadcrumbs didn't stick very well, but it tasted great in the end!

It was very good. This was the first time I've ever cooked chicken breasts like this. My mom and sister really enjoyed them. And I will definately be making them again

this was a great recipe my husband loved it also goes well with a little mushroom spagitti sauce on top just to give it a little extra as an optional choice
