This is a great dish. Using raw cauliflower didn't appeal to me so I steamed a beautiful head I bought at the Farmers Market last weekend. Still firm, I cooled the cauliflower completely and then broke it into large florettes. I changed the dressing a bit - (1) added a bit of sour cream - (2) I didn't have Miracle Whip so I use some bottled cole slaw dressing - (3) I omitted the Parmesan cheese and instead sprinkled each serving with shredded cheddar cheese. I did also use some Ranch in the dressing mix.
The Romaine gives this salad a nice crunch and the bacon ... well, WOW!
I served this is a main dish supper and my family love-love-loved it! It's both quick and easy and only takes a bit of planing to make sure you have the ingredients. You must try this recipe. Don't be afraid to play with the dressing recipe. Mine was a sweet and sour flavor. I'll bet a hot bacon dressing would be wonderful too! Next summer, I'll be taking this to picnics instead of potato salad! Delicious!
