i was very thankful and genuinely surprised with the taste of this dish after the few revisions and substitutions i had to make.
i only had cut up rotisserie chicken, so instead of recooking it with the broth/salsa, i added it in with the rice and cheese and let it simmer.
i also only had pineapple salsa, so i added a pinch of cumin, chili powder, and crushed red pepper.
i also ended up throwing in some chopped green pepper.
it turned out way better than i had hoped.
ill definitely plan on this one, again.
