Excellent! I made 2 small changes---searing the chicken on each side in a tiny bit of oil, to lock in moisture and add a little extra flavor; I also added a can of corn (drained of course) to the skillet mixture. My kids Loved it too! Will definitely make this one again!
i was very thankful and genuinely surprised with the taste of this dish after the few revisions and substitutions i had to make. i only had cut up rotisserie chicken, so instead of recooking it with the broth/salsa, i added it in with the rice and cheese and let it simmer. i also only had pineapple salsa, so i added a pinch of cumin, chili powder, and crushed red pepper. i also ended up throwing in some chopped green pepper. it turned out way better than i had hoped. ill definitely plan on this one, again.

This was a very easy meal to make - a great weeknight treat! When I added the rice I got some in the salsa, so I scooped the salsa off the chicken and into the rice and added a bit more salsa on the chicken before adding the cheese. I will definitely make this again!
We loved the fresh flavor of this dish. I added a can of corn and a can of kidney beans, and used mozzarella instead of cheddar. It was great and we'll have this one again!

This is a great recipe - super easy and it's ALWAYS a hit at POTLUCKS - just 25 mins to make, dirties one dish and people LOVE IT!!!

Super yummy and easy to make. I added some frozen corn while cooking the rice, which was a nice accent. I will definitely make this again.
