My family really enjoyed this dish. It was quick and yummy. I didnt think my husband would like it but he asked for it a second time.

very good and simple i made it a bit different. i bought bone in chicken and slow cooked it in a crock pot. then i took all the meat off the bones. and served the whole mixture over the rice. i think it would have been alot better with crushed chips instead.

I have made this a few times for my family, and we all love it. I like to serve it with black beans and corn. I didn't think my husband would like it because he is a little picky, but I never seem to have left overs with this dish!

I prefer to use Kraft's Mexican 4 cheese variety rather than the cheddar.
