I have made these enchiladas twice now, and both times have added enchilada sauce & chili toppings. My family loves it, and it's easy! Great for a tex-mex treat!

This was good, I used BOCA ground burger in place of real beef and added chopped onions. I'm used to flour tortillas, but if it's healthier, I'm all for it! It was very filling. The tortillas still cracked, but it all ends up in your mouth anyhow!

My family loved this, but I added a lot more to it. I added Taco Bell seasoning in the ground beef and also chopped onions. After baking, I added more salsa on top, then sour cream, then chopped green bell peppers and tomatoes. Visually appealing and very tasty!

I've made this a few times, each time varying it, tho. The last couple times I used a half a can (can use whole can, depending on taste & texture) of refried beans. It keeps it moist and soft! And also, this last time i added a chili seasoning packet. Very good!!
