We love this recipe, topped enchiladas with sour cream and guacamole. Served with yellow rice. Great quick meal!

Wow! These are some great enchiladas! Only thing I did differently is I took the advice of a previous review and put the rest of the salsa on top of the enchiladas instead of on the bottom of the pan. If you love these, you should check out the Creamy Chicken Enchiladas Verde recipe from this site!

Very good! I split it in two pans and put one in the freezer, it was perfect for a quick dinner. My whole family loved it too!

Used taco seasoning in the beef after reading other reviews that the beef lacked flavor. My family loved it!

This is one of my most flavorful dishes. I used taco seasoning and added green onions to the mixture while I added the salsa and cheese. I also added green onions to the complete dish while it baked for 20 minutes it was wonderful.

I used 1 1/2 pounds of ground turkey and added a can of rinsed, drained black beans. I also added 1/2 a packet of Taco Seasoning after the salsa. I used 8 oz (1/4 loaf) of 2% Velveeta cubed to the meat mixture instead of the Cheddar. I also used Pam on the bottom of the pan after other reviews said NOT to use the salsa on the pan. Lower fat, tasted GREAT! Served topped with more salsa, Nonfat Greek Yogurt (tastes JUST LIKE sour cream) and diced green onion. Quick and delicious!
