I made this for the third time tonight, and it was SUPERB, after my second tweaking of the recipe. Tonight I subbed pre-cooked broccoli florets for the chopped, cut back on the chicken a bit, replaced almost 1/2 of the broth with water, added some chopped bell pepper and onion. The biggest change was that I used mostly shredded sharp Cheddar cheese and enough slices of Kraft American Cheese Singles to come up to the appropriate weight for the Velveeta (We don’t eat it, as it is too salty.) YUM, YUM, YUM.

The chicken broth adds a lot to the recipe. It was a hit at my house!

This was a good quick dinner. We thought it could have been cheesier and thicker. We're cheese people here. Chicken broth gave the pasta a really good flavor. Next time I might substitute veggies.
