This dish was extremely easy to make although I did change a few things. I didn't have any elbow macaroni on hand, so I used rigatoni. The end result was great, but it took a lot longer to make. I also added extra cheese because my family loves it so much. The kids and my husband all helped themselves to seconds and I will definately make it again.

This was a hit the first time I made it for my family and I've tried it again. We love it. Its quick and easy and makes great leftovers.

I made this for the third time tonight, and it was SUPERB, after my second tweaking of the recipe. Tonight I subbed pre-cooked broccoli florets for the chopped, cut back on the chicken a bit, replaced almost 1/2 of the broth with water, added some chopped bell pepper and onion. The biggest change was that I used mostly shredded sharp Cheddar cheese and enough slices of Kraft American Cheese Singles to come up to the appropriate weight for the Velveeta (We don’t eat it, as it is too salty.) YUM, YUM, YUM.
