Patriotic Poke Cake

What You Need

baked 9-inch round white cake layers, cooled

cups boiling water, divided

pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin, or any other red flavor

pkg. (3 oz.) JELL-O Berry Blue Flavor Gelatin

tub (8 oz.) COOL WHIP Whipped Topping, thawed

Make It

PLACE cakes, top-sides up, in clean 9-inch round pans; pierce with large fork at 1/2-inch intervals.

ADD 1 cup boiling water to each flavor dry gelatin mix in separate small bowls; stir 2 min. until completely dissolved. Pour red gelatin over 1 cake and blue gelatin over remaining cake. Refrigerate 3 hours.

DIP bottoms of cake pans in warm water 10 sec.; unmold. Fill and frost cake layers with COOL WHIP. Refrigerate 1 hour.

Prepare using COOL WHIP LITE Whipped Topping.

Variation - Patriotic Poke Cake with Cream Cheese Frosting

Pour gelatin over cakes and refrigerate as directed. Beat 2 pkg. (8 oz. each) softened PHILADELPHIA Cream Cheese and 2 cups powdered sugar in large bowl with mixer or whisk until blended. Gently stir in COOL WHIP until blended. Unmold cakes as directed. Fill and frost cake layers with cream cheese frosting.

I made two of these for the 4th of July Holiday this year. Usually in our family we don't leave room for dessert but every piece of these were gone by the end of the night. They are moist and very easy to make. I can't wait to try different flavors of this cake... LOVE IT!

This cake came out fantastic, felt weird pouring hot liquid over cake, but it worked great! Moistest cake you'll ever eat. I used the Pudding frosting recipe for the frosting, it was wonderful!!!

I made this cake for this July 4th get together and everyone loved it. I was ask to make another one. Gone in within 5 minutes. This cake was a big bang.

So cute! It was the hit of the party! Simple, delicious and healthy when made with Light Cool Whip, Sugar Free Jello and applesauce in place of the oil in the cake!!

Everyone loved this cake! It tasted great and looked beautiful! However the top cake slid off the bottom twice during transportation, so I put toothpicks in it to hold it together.

I made this one 4th of July, but instead of just plain cool whip, I bought the strawberry flavor, plus topped with slices of fresh strawberries. Everyone raved about it.
